This is a different style than you might expect when it comes to Asian dining, especially at such elevation as the restaurant lies on the heart of the Swiss Alps. The Japanese Restaurant at the Chedi hotel in Andermatt is exceptional in every way. The entrance is already promising as the minimalist design of the hallway leading towards the 'hot' counter immediately makes you feel you are entering a restaurant in Japan instead of a Japanese restaurant in the Alps.
A true Asian dining experience
The staff welcomes you by letting you choose in which section you would like to dine. the regular restaurant with normal tables is already a nice experience but we chose to sit at the cold counter facing all kinds of exclusive fish and a very talented sushi chef at work. the sommelier introduced us to the menu and explained us a bit more about the lesser known wines from Japan. Indeed, they served sake but this was more or less a new experience to us as we learned about sake and the difference between the various bottles. We learned it the good way as we tasted some really interesting ones interspersed with various 'regular wines' like a mouthwatering Tuscan Tenuta Argentiera Villa Donoratico Bolgheri.
As the dishes kept coming the food got even more interesting as we finished with the most tender Wagyu beef we ever tasted.
The staff is very well informed and as you speak with them you can tell they've tried everything they serve here, guiding you delicately in making the right choice in food that fits you mood.
