Dinner at The Restaurant is an experience by itself. The moment you walk in, while you are guided to your table by the friendly and well trained staff, it is impossible to miss the enormous cheese humidor that divides the open-theatre kitchens from the dining area. The humidor is made out of glass so you can have a sneak peek already that will make your expectations rise by the minute. As you sit down in the comfortable chairs and couches of the dining area you first have to get used to the space. at The Chedi everything is big but certainly not un-personal we have to say. Everything is well designed and thought trough making you feel relaxed and cozy. Distance between you and your neighbours table are exactly right and the table setting is perfectly balanced within this high-ceiling-space.
The food
The menu here is a selection of different a la carte choices and set menu's all with their own twist to it. You can also swap the courses if you have you mind set on a certain dish from the a la carte menu.
The plates are very well decorated and served on time. Especially when you choose for wine pairing to go with it there is enough time to make this a culinary dinning experience that takes more than a few hours. the cuisines serves some great classics with a modern twist from around the world inspired by mainly the Italian, French and pas Asian cuisines. The desert is actually one of the highlights, especially when you choose for a selection of cheeses. You will be escorted by the sommelier or staff to into the cheese humidor that boasts a unique selection of regional cheeses. The staff is so well trained that they can help you make the right choice for your taste buds.
